Island Lighting (over eating area)

Our kitchen island has 2 distinct sections ... one for prep and the other is a dropped section for eating (regular table height). The eating area is 1/2 of a 6x8 round table in area. I am planning to hang 3 pendant lights over the eating portion (and a few task recessed lights over the prep area). I don't know if I should use incandescent lighting, florescent lighting or LED lighting in the pendants. Any suggestions?

I know that LED lights can't be dimmed very much and I don't want the area too bright, but want enough light.

Florescent lighting is my suggestion at your eating area.

An eating area would be the last place I would use fluorescent lighting.

Make sure the light are out of head striking range.
